A wooden instrument on four cylindrical legs with a rectangular base, through the shorter sides of which pass two nuts or bolts joined by two crossbars, one beneath the base and the other above it, and two S-shaped keys or nuts. In the centre of the base there is a recess with a drainage channel, and on top of this a circular board that fits into the cavity. The upper crossbar features carvings of geometric motifs of rudimentary workmanship.
Used to press the semi-solid curd (matón) inside a mould as one of the necessary steps in the production of Idiazabal sheep’s milk cheese.
